Over the past few years, we’ve had hundreds of requests for the secret recipe for our legendary chocolate brownies. We’ve kept that secret all these years, but this month, we’re giving in! Have a go at making these gooey squares of chocolate deliciousness at home… you’ll be so glad you did!

Duane’s Legendary Chocolate Brownie
(Duane is Tony’s pastry chef)

20 nice sized squares

300g Caster sugar
5 Medium free-range eggs
150g Milk Chocolate
150g Dark Chocolate
250g Unsalted Butter
75g Cocoa Powder
150g Plain Flour
1/2 tsp Baking Powder


Melt Chocolate and butter over a Bain Marie and mix together. In mixing bowl beat the eggs and sugar until light fluffy then pour in melted chocolate and butter mix. Mix again briefly before sifting in flour, cocoa powder and baking powder, fold together with a spatula. Line a baking tray with parchment paper, pour in mixture and bake for 35 minutes at 150 Degrees Celsius depending on how gooey you want the brownies inside. Serve warm or chill and cut into squares. Serve with warm chocolate sauce and whipped sweetened vanilla cream.
